How can i stop my puppy from biting?

We have a 9month old Irish setter puppy that we got from someone a week ago. He has been partly trained and is an absolutely great natured pup (i'm saying pup because of his age though when you stand next to him his height and sheer size is very intimidating). We can't stop him from jumping up but only does this with woman does not do this with my husband. Casper also jumps up onto my shoulders when my back is turned. We have 2 children and Casper is the same height as our 6yr old daughter. He just seems to miss you even if you just go to the toilet and come back. We are concerned that he may hurt 1 of the kids but we really want to keep him. He also does this biting carry on too, seems to think you are constantly playing with him. We have been trying the sit command for the jumping and turning our back but the jumping up onto my shoulders continues. PLEASE HELP advice greatly appreciated
